7 Moles del Universo is Chef Geno Bahena’s signature tasting experience, designed as a curated progression through Mexico’s regions, each course revealing a distinct interpretation of mole.

Served as a seven-course tasting menu, the experience moves with intention—from the deep, complex notes of Mole Negro to brighter, herbaceous, and fruit-forward expressions—culminating in a rare and elegant finale. Each plate is composed with precision: rooted in tradition, yet elevated through modern technique and presentation.

The menu is thoughtfully vegetable-forward, vegetarian-friendly, and largely gluten-free, allowing the depth of each mole to shine while remaining inclusive. Ancient masa techniques, seasonal ingredients, and carefully sourced proteins are woven throughout, creating a balance of authenticity and innovation.

Offered once per month in a limited seating format, this is an intimate, reservation-only experience designed for guests seeking something immersive, transportive, and deeply expressive of Mexico’s culinary heritage.
